Grilled Shrimp and Guac Tacos with Corn Grilled in the Husks
Andrew and I made these tonight and they were Ahh-MAZING!
Here's how it went down.....
Grilled Corn:
Crank your grill up to medium heat and throw the corn ( keep in the husk) on the grill. Let them cook for about 20-25 minutes.
Guac:
1 large avocado or 2 small ones chopped
1 small tomato chopped
1 small yellow onion chopped
2 small jalepeno chopped
1 lime (juiced)
salt and pepper to taste
Combine everything and mash with fork until you get the consistency you like. We like ours chunky!
Grilled Shrimp Skewers:
Place raw-peeled shrimp on skewers.
Splash shrimp with EVOO.
Sprinkle shrimp with a little Tony Chachere's Creole Seasoning.
Cook on low heat for 2-3 minutes.
Butter up the corn......get out those flour tortillas and put your shrimp and guac in them .......top with a little lettuce, sour cream, and cheese and eat up! SO YUM!
